70gTahini
Salt to taste
3gCumin powder
Fresh lemon juice
250gEdamame beans
10gPreserved lemon paste
8gGarlic puree
50mlCold water
Fresh coriander to taste
Puffed crispy edamame beans to taste
Sfogliate (dip crackers) to taste
Preparation
- Cook the edamame beans for 5 minutes in salted water and then rinse them with cold water.
- Put the edamame beans together with the tahini, garlic puree, preserved lemon paste, cumin powder, and lemon juice in a food processor.
- Blend everything into a smooth mixture.
- Let the food processor run and gradually add the cold water until the hummus is creamy.
- Season with salt.
- Garnish the hummus with chopped coriander leaves and crispy puffed edamame beans.
- Serve the crackers separately.
